4 ears fresh corn, in husks 1/2 stick (1/4 cup) salted butter,
softened 1/4 cup chopped fresh sage 1/2 teaspoon fresh-ground black pepper
Directions: Prepare the corn: Preheat grill to medium-high. Fill a
large bowl with water, add the corn, and soak for 30 minutes. Stir together the
butter, sage, and pepper in a small bowl and set aside. Cut four 12-inch pieces
of kitchen twine and set aside. Drain the corn and, without removing the husks
from the ears, pull them away from the cobs and remove the silk to reveal the
kernels. Brush each ear with about 1 tablespoon of the sage butter and replace
the husks. Tie the husks closed by wrapping the twine around the ear several
times and securing at the top with a knot. Grill, turning corn occasionally
while cooking until kernels are just tender-30 to 40 minutes. Untie ears and
serve immediately
